Abstract


A Study on the Culinary Culture of Gevaş District from the Perspective of Intangible Cultural Heritage
The aim of this study is to reveal the forgotten culinary culture of Gevaş district of Van province and to investigate the ingredients used in Gevaş regional dishes. In addition, it is another aim of the study to determine which local dishes are offered to customers in the menus of local food establishments in Gevaş district. The universe of the research; Women aged 50 and over living in the Gevaş district and the owners of the businesses that make local food in the district. Face-to-face interviews were conducted to collect data in the study. In this context, a total of 42 interviews were conducted with 40 women and 2 business owners. As a result of the research, it has been determined that there are 19 dishes, 7 soups, 4 desserts and 1 appetizers in Gevaş district and it has been determined which materials are used in the mentioned product types. It was determined that the women produced only 7 of the regional cuisine products in question in the interviews with 2 business owners based on the regional cuisine products specific to the Gevaş district. It is thought that this study will play an important role in transferring food varieties that can be considered as intangible cultural heritage assets to future generations.
